Orange Baked Salmon

You have a fresh little Salmon sitting there in front of you and you are wondering what to do with it.  Not the same old baked with a spritz of Lemon again I hope!  This is a super easy recipe that you can crank out in less than an hour from start to finish and tastes great!  The Salmon is given a quick orange and lemon juice marinade, then a tasty rub is applied and the fish baked for a few minutes until it is flaky and the juices run clear.  Give it a try, it is a great way to break up the baked Salmon doldrums.  This recipe is geared for the two fillets from one smallish Salmon.

INGREDIENTS

1 Salmon – Cut into fillets
1/2 Cup Orange Juice
1 Tbs Lemon Juice
2 Tsp Brown Sugar
~1 Tsp Paprika – Smoked if possible
1 Tsp Salt
~1 Tsp Garlic Powder
~1 Tsp Onion Powder
1/s Tsp Ground Coriander
1/4 Tsp Cayenne Pepper
1/4 Tsp Ground Cumin
~1 Tsp Vegetable Oil

In a large resealable bag, mix up the Orange Juice and Lemon Juice. Add the Salmon, remove as much air as possible, seal and refrigerate for about 30 minutes.

Preheat the oven to 400°.
Use the Vegetable Oil to lightly oil a shallow baking dish.

Combine all the spices in a small bowl.

After the Salmon has marinated for 30 minutes, remove the Salmon from the Marinade and pat dry.  Discard the Marinade.  Rub the spice mix all over the Salmon and put in your baking dish skin side down!

Bake for 10-15 minutes depending on the thickness of your fish.  Check every couple of minutes after 10, as it will go from great to dry before you know it!

    Tried this recipe and this is delicious!! However, I do wish the nutritional facts were listed with this recipe as well.
